Instructions
Begin by preheating your oven to 400°F (200°C) to create the perfect roasting environment for the beets.
Carefully cut each beet into uniform wedges, aiming for about 8 wedges per beet.
In a spacious mixing bowl, add the beet wedges. Pour in the olive oil, and sprinkle the sea salt, black pepper, fresh thyme leaves, minced garlic, and lemon zest over the top. Toss everything together gently but thoroughly.
Line a baking sheet with parchment paper and place the marinated beets in a single layer on the sheet.
Roast the beets in the preheated oven for about 30-40 minutes, stirring halfway through. Test for doneness with a fork or knife.
Once done roasting, remove the beets from the oven and allow them to cool slightly. Drizzle with balsamic vinegar if using and toss gently.
Serve the beets warm or at room temperature as a side dish or salad addition.
Notes
For added flavor, serve with crumbled goat cheese or feta. Great over arugula.
