Instructions
Prepare the Vegetables: Begin by thoroughly washing all the vegetables. Slice the red cabbage into thin strips, julienne the carrots, and thinly slice the assorted bell peppers and cucumber. Cut the avocado into even slices. Arrange each vegetable in separate bowls for easy access.
Soften the Rice Paper: In a large, shallow dish or a wide mixing bowl, pour in warm water. Submerge one rice paper wrapper in the water for about 10-15 seconds, or until it becomes pliable and soft. Carefully lift it out and lay it flat on a clean, dry surface.
Assemble the Spring Rolls: On the lower third of the softened rice paper, place a small handful of red cabbage, followed by a few sticks of carrot, slices of bell pepper, cucumber sticks, a slice of avocado, and a couple of fresh mint and cilantro leaves.
Roll the Spring Rolls: Gently fold the edges of the rice paper over the filling. Starting from the bottom, carefully roll it up, tucking the filling in as you go, to create a tight roll. Be careful not to roll too tightly to prevent tearing the rice paper. Repeat this process with the remaining wrappers and filling ingredients.
Make the Dipping Sauce: In a small mixing bowl, combine the peanut butter, soy sauce, lime juice, and honey (or agave). Whisk the ingredients together until smooth, adding a splash of water to adjust the consistency to your liking. Continue to whisk until the sauce is creamy and well combined.
Serve the Spring Rolls: Arrange the freshly made spring rolls on a serving platter. Sprinkle sesame seeds on top for an added crunch and serve with the dipping sauce on the side for a delightful treat.
