In a medium-sized bowl, combine the warm water, active dry yeast, and granulated sugar. Stir gently and let the mixture sit for about 5 minutes, or until it becomes frothy, indicating that the yeast is activated.
In a large mixing bowl, whisk together the all-purpose flour and salt. Create a well in the center of the flour mixture and pour in the activated yeast mixture. Using a wooden spoon or your hands, mix until a dough begins to form.
Transfer the dough to a lightly floured surface. Knead it for 5-7 minutes until it becomes smooth and elastic. Place the kneaded dough into a greased bowl, cover it with a clean kitchen towel, and let it rise in a warm place for about 1 hour, or until it has doubled in size.
Preheat your oven to 450°F (230°C). Line a baking sheet with parchment paper to prevent sticking.
In a large pot, bring 10 cups of water to a rolling boil. Once boiling, carefully add the baking soda to the water, resulting in a fizzy reaction.
After the dough has risen, punch it down to release any air bubbles. Divide the dough into 24 equal pieces and roll each piece into a small ball, ensuring they are uniform in size for even baking.
Gently lower each ball into the boiling baking soda solution for about 30 seconds. This step gives the pretzel bites their signature flavor and texture. Remove each ball with a slotted spoon and place them on the prepared parchment-lined baking sheet.
Brush each pretzel bite generously with the beaten egg to create a golden crust while baking. Sprinkle with flaky sea salt and, if you enjoy an extra layer of heat, add a pinch of crushed red pepper flakes on top.
Bake in the preheated oven for 12-15 minutes, or until the pretzel bites are golden brown and puffed.
Once baked, allow the pretzel bites to cool for a few minutes on a wire rack. Just before serving, drizzle each bite with hot honey for a sweet and spicy finish.
