Instructions
Begin by preheating your oven to 425°F (220°C).
Chop the trimmed carrots into evenly sized pieces, approximately 2-3 inches long.
In a large mixing bowl, toss the carrot pieces with olive oil, salt, and black pepper.
Spread the seasoned carrots out on a baking sheet in a single layer and bake for 25-30 minutes, stirring halfway through.
Meanwhile, prepare the whipped ricotta by blending ricotta cheese, lemon juice, and a pinch of salt in a food processor until smooth.
In a small saucepan over low heat, warm the honey and crushed red pepper flakes together until infused.
Once the carrots are tender and aromatic, remove them from the oven and let them cool for a few minutes.
To assemble, spread whipped ricotta on a serving platter, arrange the roasted carrots on top, and drizzle with hot honey.
Garnish with finely chopped fresh herbs.
