In a sizable mixing bowl, blend the ground beef (or turkey) with breadcrumbs, egg, garlic powder, onion powder, smoked paprika, salt, and pepper. Use your hands or a spatula to mix until the ingredients are evenly distributed and well combined.
Scoop out a small portion of the meat mixture and shape it into a pumpkin-like patty, about the size of a medium lemon. Pinch the sides to create ridges and press a small indent in the center of each patty for more even cooking.
Heat a non-stick skillet or grill over medium-high heat. Carefully place the patties in the skillet and cook them for about 4-5 minutes on each side. Ensure they are fully cooked through—the internal temperature should reach 165°F for turkey or 160°F for beef. In the last minute of cooking, add a spoonful of shredded cheese on each patty to allow it to melt perfectly.
Take the bottom halves of the mini buns and spread a generous layer of ketchup and mustard on each. Place a pumpkin-shaped patty on top, then add optional pickle slices and a piece of crisp lettuce, if desired. Finish by adding the top halves of the buns.
For an extra festive touch, use fresh parsley leaves to create a stem on the top of each burger, giving them an adorable pumpkin effect.
