Instructions
Begin by preheating your oven to 425°F (220°C) to ensure it’s hot and ready for roasting.
In a large mixing bowl, add the peeled baby carrots and drizzle with the extra virgin olive oil. Toss the carrots well to ensure each one is evenly coated with oil.
Next, sprinkle the freshly grated Parmesan cheese, dried thyme, dried rosemary, garlic powder, sea salt, and freshly cracked black pepper over the carrots. Toss them again thoroughly until every carrot is generously coated with the seasoning mix.
Line a baking sheet with parchment paper to facilitate easy cleanup and spread the seasoned carrots in a single layer across the baking sheet. Make sure they are not overcrowded for optimal roasting.
Place the baking sheet in the preheated oven and roast the carrots for 25 to 30 minutes. Stir the carrots halfway through the cooking time to ensure they cook evenly and develop a lovely golden-brown color.
Once the carrots are tender and beautifully caramelized, remove them from the oven. Finally, sprinkle freshly chopped parsley over the top for a burst of color and freshness before serving.
