Instructions
Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
In a shallow bowl, combine breadcrumbs with Parmesan cheese, garlic powder, onion powder, smoked paprika, salt, and black pepper. Mix well.
In a separate bowl, beat the eggs until fully combined to create an egg wash.
Dip each zucchini fry into the beaten eggs, allowing excess to drip off, then roll in the breadcrumb mixture, pressing gently to coat.
Arrange the breaded zucchini fries on the prepared baking sheet in a single layer and drizzle with olive oil.
Bake for 20-25 minutes, flipping halfway through for even browning.
