Prepare the Chicken: Take each chicken breast and place it between two sheets of plastic wrap. Using a meat mallet, gently pound the chicken until it is about 1/2 inch thick.
Layer with Prosciutto and Sage: On each flattened chicken breast, lay 2 slices of prosciutto followed by 2 fresh sage leaves. Use toothpicks to secure them in place.
Coat in Flour Mixture: In a shallow dish, whisk together the all-purpose flour, salt, and black pepper. Dredge each piece of chicken in this mixture, shaking off excess flour.
Sear the Chicken: In a large skillet, heat the olive oil and butter over medium-high heat. Add the prepared chicken and cook for 4-5 minutes on each side until golden brown. Transfer to a plate and set aside.
Make the Sauce: In the same skillet, pour in the chicken broth and scrape the bottom to deglaze the pan. Stir in the zest and juice of the lemon and simmer for 2-3 minutes until thickened.
Combine and Heat Through: Return the chicken to the skillet, spooning the lemon sauce over each piece. Cook together for an additional minute.
Final Touch: Remove from heat and discard the toothpicks before serving.
