Instructions
Begin by preheating your oven to 350°F (175°C). Prepare a baking sheet by lining it with parchment paper to prevent sticking and for easy cleanup.
In a medium-sized mixing bowl, combine the all-purpose flour, unsweetened cocoa powder, baking soda, salt, ground ginger, ground cinnamon, and ground nutmeg. Whisk them together thoroughly until evenly mixed.
In a large mixing bowl, use an electric mixer set to medium speed to cream together the softened unsalted butter and packed brown sugar until the mixture is light in color and fluffy, which should take about 3-5 minutes.
Add in the molasses, large egg, and pure vanilla extract. Beat the mixture until all ingredients are incorporated and smooth, making sure to scrape down the sides of the bowl as needed.
Gradually introduce the dry ingredient mixture into the wet mixture, mixing on low speed. Continue until the batter is just combined and no dry flour remains visible.
Cover the bowl with plastic wrap and refrigerate the dough for at least 30 minutes. This helps to firm up the dough, making it easier to handle.
Once the dough has chilled, scoop tablespoon-sized portions of dough and roll them into smooth balls between your hands. Then, generously coat each ball with powdered sugar, ensuring they are well-enveloped.
Arrange the powdered sugar-coated dough balls on the prepared baking sheet, spacing them about 2 inches apart to allow for spreading during baking.
Bake in the preheated oven for 10-12 minutes, or until the edges appear set while the centers remain soft and slightly underbaked. The cookies will continue to firm up as they cool.
Remove the baking sheet from the oven and let the cookies cool on the sheet for about 5 minutes for easy handling before transferring them to a wire rack to cool completely.
