Instructions
Begin by filling a large pot with water and setting it over high heat. Once the water reaches a rolling boil, carefully add the cauliflower florets and garlic cloves. Allow them to cook for approximately 10-12 minutes, or until the cauliflower is fork-tender.
After cooking, drain the cauliflower and garlic thoroughly using a colander and transfer them into a spacious mixing bowl.
In the mixing bowl, drizzle the extra virgin olive oil and add the almond milk. Sprinkle in the chopped chives and parsley. If you desire a cheesy zest, now is the time to stir in the nutritional yeast.
Using a sturdy potato masher or an electric mixer, mash the cauliflower mixture until you achieve a smooth and creamy texture. If the mixture appears too thick, gradually add more almond milk until the desired consistency is reached.
Season your mashed cauliflower generously with salt and freshly ground pepper, stirring well to ensure even distribution of the seasonings.
Serve the garlic herb mashed cauliflower immediately for the best flavor and texture, or keep it warm on low heat until ready to present to your guests.
