Instructions
In a spacious mixing bowl, whisk together the coconut milk, lime zest, lime juice, honey, minced garlic, ground ginger, salt, and black pepper until the mixture is smooth and well blended.
Add the chicken cubes into the marinade and stir until all pieces are thoroughly coated. Cover the bowl tightly with plastic wrap and allow it to marinate in the refrigerator for at least 1 hour, or for best results, overnight to infuse maximum flavor.
Preheat your grill or grill pan to medium-high heat, ensuring it’s hot enough for a good sear on the chicken.
Once marinated, thread the chicken cubes onto the soaked bamboo skewers, ensuring to leave a small gap between each piece to promote even cooking.
Grill the skewers for approximately 10-12 minutes, turning them periodically to achieve an even char and ensure the chicken is cooked all the way through. Use a meat thermometer to confirm that the internal temperature has reached 75°C (165°F).
Once cooked, remove the skewers from the grill and let them rest for a few minutes to enhance juiciness.
Garnish the skewers generously with freshly chopped cilantro and serve alongside lime wedges for an invigorating burst of flavor!
