Instructions
Carefully insert a lollipop stick or skewer into the stem end of each strawberry, ensuring it is securely in place without piercing through the berry.
In a microwave-safe bowl, combine the semi-sweet chocolate chips and coconut oil. Heat in the microwave in 30-second intervals, stirring well between each burst, until the chocolate is completely melted and glossy.
Grasp each strawberry by the stick and dip it into the melted chocolate. Rotate gently to ensure the strawberry is fully coated, allowing any excess chocolate to drip back into the bowl.
While the chocolate is still wet, roll the chocolate-dipped strawberry in your choice of crushed nuts or colorful sprinkles, coating it completely on all sides.
Carefully place the completed chocolate-covered strawberries upright in a foam block, a sturdy glass, or on a baking sheet lined with parchment paper.
Place the strawberry pops in the refrigerator for approximately 30 minutes, or until the chocolate has fully hardened.
