Instructions
Preheat your oven to 375°F (190°C) so it's ready for roasting the pears.
Slice the pears in half lengthwise and carefully scoop out the core using a spoon to create a cavity for the filling. Be gentle to avoid breaking the pear halves.
In a mixing bowl, combine the crumbled blue cheese, softened cream cheese, honey, chopped nuts, fresh thyme, and a pinch of salt and pepper. Stir well until all ingredients are thoroughly mixed and creamy.
Generously fill each pear half with the cheese mixture, pressing down slightly to ensure they are well-packed.
Arrange the stuffed pears on a baking sheet lined with parchment paper to prevent sticking, and place in the preheated oven. Bake for approximately 15-20 minutes or until the pears are tender and the cheese is melted and bubbling.
Once done, remove the pears from the oven and let them cool for a few minutes on the baking sheet.
To serve, create a bed of mixed greens on each plate, place a stuffed pear half on top, and drizzle with balsamic glaze and some additional honey, if desired.
Notes
For an elegant touch, garnish the plates with a sprinkle of extra chopped nuts and some fresh thyme sprigs.
