Begin by taking a medium-sized mixing bowl. In this bowl, add the rolled oats, almond milk, diced apple, ground cinnamon, maple syrup, vanilla extract, and a pinch of salt. If you’re using Greek yogurt, add it now as well. Mix everything together thoroughly until all ingredients are well combined.
Taste the oat mixture and adjust the sweetness according to your preference by adding a bit more maple syrup if needed.
Once you’re satisfied with the flavor, evenly distribute the mixture into two mason jars or airtight containers.
Secure the lids on the jars or containers tightly. Place them in the refrigerator for overnight soaking, or for at least 4 hours. This allows the oats to soften and absorb the flavors.
The next morning, retrieve the oats from the refrigerator and give them a good stir. If the mixture appears too thick for your liking, simply add a splash of almond milk to reach your desired consistency.
To finish, sprinkle the chopped walnuts on top for added texture and crunch. If desired, you can also dust a little more ground cinnamon on top for extra flavor.
Notes
For a rustic look, serve the oats directly in the jars. Garnish with a slice of fresh apple or a sprinkle of granola on top to enhance visual appeal. Enjoy chilled for a refreshing breakfast!
