In a large mixing bowl, combine the almond butter and honey (or maple syrup). Mix them together vigorously until you achieve a smooth and creamy consistency.
Add in the pure vanilla extract and sea salt. Stir well to blend these flavors together.
Gradually mix in the rolled oats, shredded coconut, chopped almonds, and dark chocolate chips. Make sure all ingredients are incorporated evenly, forming a thick mixture.
Prepare an 8x8 inch square baking dish by lining it with parchment paper, allowing excess paper to hang over the sides for easy bar removal.
Transfer the mixture into the lined baking dish. Use a spatula or press down with your hands to ensure the mixture is packed tightly and creates an even, compressed layer.
Cover the dish with plastic wrap and place it in the refrigerator. Chill for at least 1 hour, or until the mixture is firm enough to hold its shape.
After chilling, remove the bars from the pan using the parchment overhang and carefully lift them out. Cut into even squares or rectangles based on your preference.
Store the energy bars in an airtight container in the refrigerator for up to 2 weeks. For longer preservation, freeze them in a sealed bag or container.
