  • Gradually mix in the dry ingredients from your medium bowl into the wet ingredients, using low speed on your mixer. Mix only until the ingredients are just combined—do not overmix.
  • Carefully fold in the rainbow sprinkles using a spatula or wooden spoon, ensuring they are evenly distributed throughout the batter for that festive pop of color.
  • Pour the batter into your prepared baking pan. Use a spatula to spread it evenly across the surface, smoothing out the top as much as possible.
  • Bake in the preheated oven for approximately 20-25 minutes. The cookie bars are done when the edges are lightly golden and a toothpick inserted into the center comes out clean.
